If you'd just started it would be another story, but if it's been much of a year, if you don't include the postdoc, it would look to me like a red flag. Hopefully the letter can highlight the other work you've done during the postdoc even though the mentor is not the one directly involved. And I agree with the answer suggesting you discuss this with your supervisor. | |

Not having a letter from your main host/mentor/supervisor might rise flags. | |
