It's also pretty common for one person to draft the whole paper, and then pass it around, or back-and-forth, for coauthor(s) to edit. I've done both of these in my collaborations as well as a sort of mix: one person writes most of the paper, but a small part will be written by other coauthors, then pass back-and-forth to edit.
