Putting it on Sunday would only make it seem as if they have more time than they actually have. (If student are expected to work on weekends, that's a different story).

Feb 19, 2018 at 12:34 comment added user25112 The assumption here is that it is reasonably possible to finish the assignment before the weekend. If that's the case, I agree with this answer. If not, it's better to postpone the deadline.
