Having published my thesis on researchgate, I have noticed that the contact email in the text is incorrect. Some people have already downloaded it and may have even tried to contact me. My email in my Research gate profile is the right one, however, I would like to know how to fix this error. Should I delete and update the item on the Researchgate website? Does this affect the DOI or something like that? Thank you all in advance.

First of all, I would not stress too much about the issue of a paper of yours that has an old email address. That happens a lot, because people change institutions over the course of a career. Researchers are used to the idea that the email address they see in the publication might be out of date, and will usually google the author (especially of a PhD thesis) to find an up-to-date email address. Also, most email providers will alert someone if they tried to email an email address that does not exist.
That said, if you want to, you can always upload a new version on ResearchGate and this is better than deleting the entry entirely and creating a new entry. The DOI is an identifier attached to a published work, usually at the stage of the journal publication and not at the stage of a thesis, so it's not relevant here. On ResearchGate, once you click on the relevant title for your thesis, there's a button for "Add full-text." If there's already a full text available, then you can click on the tab "More" and under it you have "add full text" (also an option to "add supplementary resources") that will override the current full text. The point is that it's easy to update the file if you want to fix the email issue.
